Pour Over Brew Recipe: Heart Coffee Roasters

Here’s how to brew better coffee.

Recipe Overview

  • Coffee amount: 22g
  • Grind size: Medium/fine (16 on Baritza Encore)
  • Water: 360g
  • Water temperature: 200 — 205°F (93–96°C)
  • Water-to-coffee Ratio:1:16
  • Brew time: 2:20 — 2:30 minutes.

Equipment

  • Pourover dripper
  • Paper filter
  • Scale
  • Timer
  • Stirring tool (chopstick or spoon)
  • Gooseneck kettle
  • Mug or coffee server

Method

  1. Rinse the filter thoroughly, dispose of rinse water.
  2. Add 22g of ground coffee, settle it for an even coffee bed.
  3. Bloom the grounds by pouring 40–50g, immediately stir vigorously with the stirring tool.
  4. At 00:20, pour water slowly, directly in the center of the bed until the scale reads 360g. Your pour should take 1:50 minutes to complete.

5. After pouring up to 360g, stir once more to get the grounds off the sides.
