Chemex Brew Method: The Long Pour
This week’s brew method interested me because of its incredibly long and slow pour. The method calls for 425g of water to be poured over 120 seconds. This type of coffee maker relies heavily on gravity to pull the water through its filter to extract the coffee. By pouring slowly, evenly, and for a longer period, the extraction will be ultimately more even.
Inspired by the recipe by Brian W. Jones — ‘Brew Better Coffee at Home’, here is your brew method for this week.
This recipe makes 2–3 cups of coffee.

What you’ll need:
- The Chemex
- 1 Chemex Filter
- 30g Coffee: Ground medium- course (Setting 18 on a Baratza Encore grinder)
- Gooseneck Kettle (For complete control of the water as you pour)
- Water (200F or 93C)
- Scale
- Timer
- Mug(s)
Set-Up:
