I am always a fan of a brew method that allows you to make a lot of quality coffee. I have found that this brew method inspired by George Howell’s Six Cup Brew For Two does this very well. Use it if you have a partner or friend to make coffee for as it produces a whopping 780g.

As always, I encourage you to check out George Howell’s website and many resources before coming back here to use the following guide as a reference. After all, these weekly articles are all about the exploration of coffee.

What you’ll need:

  • The Chemex
  • Chemex filter
  • Scale
  • Timer
  • 50g Coffee: Ground medium (setting 18 on a Baratza Encore grinder)
  • Kettle
  • Water
  • Mugs

Set up:

  1. Insert the filter into the Chemex and rinse thoroughly with hot water. Do this by facing 3 filter layers against the spout. Empty the rinse water. Tare to zero.
  2. Grind your coffee (setting 18 on a Baratza Encore grinder). Add the grounds to the Chemex and shake to level the grounds…
